A very tasty Baked Chicken Breast

This recipe is from completerecipes.com

This was a very easy to make recipe and for me, I already had the chicken on hand. I am sure by now you can guess what we mostly eat here at my house, Chicken!. So with that being said you can see why I am trying to get creative.

not pictured is the mayonnaise.

Ingredients:

4 boneless chicken breast
1 cup of mayonnaise
1/2 cup parmesan cheese
1/2 tsp black pepper, ground
1 tsp garlic powder.

And this was a really easy recipe, not too many steps, so it can be made on nights where you need something quick. It only takes 45 minutes to cook!

Instructions:

Mix mayonnaise, cheese, and seasonings. Spread mixture over chicken breast and place in baking dish. Bake at 375 degrees for 45 minutes.

What I did was chop my chicken into smaller pieces then I mixed them in the actual mix before placing them into the baking dish. Before placing them into the oven I garnished them with some Mrs. Dash Italian seasoning.

I made homemade mashed potatoes to go along with the chicken and then I made a gravy from www.chocolatemoosey.com

Homemade gravy without meat drippings.

Ingredients:

4 tablespoons (1/2 stick of butter)
3/4 cup of onion, chopped
2 tablespoons of flour
1 cup of broth, any flavor, I used chicken
1 tablespoon of heavy cream
salt to taste

Instructions:

In a large sauce pan, melt butter, cook the onion until lightly browned, roughly 5-8 minutes. Whisk in the flour and cook for 1 minute. Whisk in the stock and cook uncovered until thickened, roughly 5 minutes; whisk in the cream or milk and season with salt to taste. Serve while hot.

This was very easy to make and worked very well with my mashed potatoes.

The entire meal was well liked by my whole family which is a rare occurrence.
