Jalapeno Popper Soup

 
I came across this recipe one morning as I was scrolling through my news feed. It is from Life Made Simple. The best thing about it was, jalapenos which my husband really likes, and this was a day I would need to feed the husband only. So I set about getting it all ready to surprise him when he came home. I was really excited because the hubby is a big soup eater.
 



 
 
Ingredients:
 
1 tablespoon butter
1/2 red bell pepper
1/2 green bell pepper
1/2 onion chopped
3-4 jalapeno peppers minced (put as many as you would want it to be spicy)
3 cloves of garlic
3 tablespoons of flour
1 cup of corn
1 head of cauliflower chopped ( I did not use this as I had none in the house)
3 1/2 cups of chicken broth
1/2 teaspoon of salt
1/4  teaspoon ground pepper
1/4 teaspoon garlic powder
1/4 teaspoon of onion powder
1/4 teaspoon of paprika
1/4 teaspoon chili powder
a pinch of cumin
Garnishes are optional:
bacon crumbles
cheddar cheese
slices of jalapeno

 


 

Directions:
 
1) in a large stockpot or Dutch oven, melt butter over medium heat. add the bell peppers and onion, cook until tender, about 3-4 minutes. Add the jalapeno peppers, and the minced garlic, cook for 1 additional minute. Stir in the corn and cauliflower, cook for about 3-4 minutes, then sprinkle the flour over top and cook until lightly browned.
2) Turn heat up to medium, whisk in the chicken broth and milk and cook until the mixture begins to simmer. Add the seasonings and continue simmering for 15 minutes or until the cauliflower is tender. (I didn't use the cauliflower, so I just whisked it and watched it until it came to a boil)
3) Add the cream cheese and whisk vigorously until incorporated. This is constant whisking to get it smooth and creamy again.
4) Remove from the heat and garnish with desired toppings.
 
I mixed in Colby cheese just before removing the soup from the heat.
 
This soup was  a success! The hubby loved it and said that he wouldn't mind having it again sometime.
